Sometimes the liquid in the fruit and veg varies Sparky and it can take longer than it should, especially if you increase the recipe.  I find if I increase the recipe the texture is quite soft because of the increased cooking time.
At the moment if I increase the cooking time  I give a fast boil at the beginning it seems to stop this happening.

A fast boil at the beginning of making chutney if I want the fruit and veg to stay chunky, or a fast boil at the end to hurry things along.

It is quite scary to work out how many years we have been making preserves isn't it.  :ohmy:42 years ago I started and it is still as satisfying to see the filled finished jars on the table. :lol:
