absolutely nothing???

due to the massive rainfall this year the few swedes i've grown are huge.  the problem is I can only really think of a few things to do with it.  beyond a number of root mashes i'm stumped for further uses for the things.

any suggestions?

true, but there's only so many times you can eat that!  surely it must be a bit more versatile?

Like Aunty says swede mashed with butter, salt and lots of white pepper cannot be beaten.  I havn't tried it but maybe swede chips might be nice.  After all, beetroot, parsnip and sweet potato chips are delicious.

My favourite way is to roast them along with potatoes and onions..sprinkle with olive oil, salt and a little chilli pepper. Sometimes when nearly cooked i add a few cherry toms. When they're done take veg out and stir a little mild mustard into the juices for gravy. YUM

And yes I have used them chopped fine to pad out a chutney much the same way as some people use marrow, cos they just soak up the flavours from everything else.

I use swede in curries, mash you name it, it goes in. I tend to use it like a potato.

My favourite way with swedes - and I eat a lot of them - is simple: peeled and cut into big flat slices and simmered for a couple of hours with a big chunk of fat, home-cured bacon.  Served with pepper, mustard and plenty of floury boiled potatoes!   :D
