hi all, I am very new here, and live in Morocco, so am having great trouble getting any help with preserviing etc. The figs etc are so plentiful and cheap out here, that I thought I would start preserving/making chutney/jam etc......... however, have never done it before, and am a little stuck on the basics!! i.e the jars to use (would prefer to use recycled jars from shop bought jam etc), how to sterilise, how to store etc etc........any help for the preserving novice would be gratefully appreciated in advance!

Hi & welcome.  Not much worries about frost where you are then!

I make jams/marmalade/chutneys in a big preserving pan.  When it is ready, transfer into jars, pop in microwave until bubbling again, then put the lid on loosely.   A careful little shake (to heat up the airspace), release the pressure (CAREFUL!), then tighten lid.   You will get an airtight seal every time.

I think there is a recip for fig chutney in one of my books - I'll take a look.  Needless to say, I have not tried it since they are a tad expensive in Scotland.

thank you for such a swift reply..............no, frost is not really something we come up against regularly!
wee snag though............no microwave! any alternatives??

sorry, as you can see, I am a REAL novice, and the figs are soooooooooo cheap and yummy here, it would be a crime not to do something with them!

Are figs seasonal?  If so, you could dry them easily.

Also found this chutney recipe on t'internet:

1lb onions
4lb figs
2lb sugar
1tsp cayenne pepper
2tsp salt
1tsp cloves
8oz carrots
8oz raisins
vinegar

Method:
Slice onions, top and tail figs and roughly chop.

Cover all ingredients with brown vinegar and boil for about 2 hours.

Bottle and seal while hot.

they way I have always sterilised jars is putting them in boiling water for a short while, then take them out just before you need to put preserves in them, dry them and then use them
by the time i am old and grey i might be 100% organic
