I love courgette (savoury) crumbles.
There is a nice one in the NT crumble book - it uses herbed soft cheese and emental. And I have made a great winter squash one from D Lebovitz book "My Paris Kitchen" - I am going to try it with (summer squash) courgette, as I think will be fab (probably cook quicker than the winter squash due to softer texture).
