Can any one please tell me the best way to freeze or store courgettes :)

Cooked, they don’t freeze well,come out soggy so I make soups or ratatouille. They keep in the fridge for a few days

I slice and mix with halved tomatoes, sliced onions, garlic and peppers, freeze the lot in flattened portions for winter tray-bakes. Worked ok last year ;)

Do you freeze raw or cooked

Grated raw and frozen in bags with as little air as possible. Good for thickening up soups and stews in the winter. Or adding to cottage pie base.

I peel and grate and store in the freezer

Freeze them after slicing and then either frying or gently steaming. Alternatively sliced and cooked for a few minutes in tomato sauce - with any/all/none of garlic, sweet pepper, chillies and mushrooms - then frozen for use over winter.

Raw, works for me - sprayed with oil and sprinkled with spices or herbs as they go in the oven :)

I discovered this one by accident the other day, but raw grated courgette in a burger mix is great. I was grating an onion to go in and my hand fell on a small round courgette, so I added that as well.
Super juicy, tasty burgers and you would never know it was there. It just disappears but adds a definite something. OH stuffed them down saying 'Oh is this steak mince, it is lovely'. I didn't lie, just smiled and didn't disagree :lol:
I think it would be good in meatballs as well :)

I'd just like to grow the ..................... things. Five plantings and nothing, this is the third year and the third lot of new seed. They just don't seem to like me. :D

I found a couple of large ones (oops) and have shredded them to be portioned in bags and frozen to make cakes, muffins, and sandwich bread. I may cut a few up into chunks to mix with some other veg to make a minestrone "kit" in the freezer (shorter term storage). For most savory uses, I just eat now, preferably stir-fried with garlic and olive oil until browned bits show...yum.
