Title: Chilli Vinegar

Take a jar full of chillis and fill with vinegar, add a couple of dozen finely chopped chillis and then leave at the back of the cupboard for about 3 months.

The spicy vinegar will make great salsa, salad dressings and superb on chips

Thanks for that idea snozzer, is that ordinary vinegar, or doesn't it matter?

Hi, just found the forum and think its great.

Any old vinegar will work, its a real treat, has a great kick and makes the best salsa for bunnie burgers.

I make oils with Chillies (Chuck a few in some extra virgin and leave it a week or more, gives a little kick to chops, sausages, burgers etc without blowing your head off.) so will definatley make this one.

and having both a chilli and an apple glut at the moment, made lbs of apple and chilli jelly yesterday - lovely - has a kick though!  Let me know if you want the recipe.

OH hates anything with cooked apple in it.  So any recipes without apples, but to use up my glut of tomatoes and chillies would be much appreciated!!!

I've made 2 lots of Biscombe's thai sweet chillie sauce, and I've got some tomato and chilli sauce.  I've frozen some, pickled some, not made any oil yet, but will do.  Also put a few in with my pickled cucumbers!!!!  Chillies that is, not tomatoes!

With the tomatoes. I've frozen them, made passata, tom and chillie sauce as already mentioned, soup, even bottled up just stewed sieved tomatoes!  But they are still coming!!!!!
