Rock cakes....can anyone help?

Can anyone help me?

At our village show we have a class for rock cakes for men only. IN 7 years I've never even got near a 3rd place!

Can anyone give me a nailed on, sure-fire winning recipe?

The judges don't like to see cakes that were made from too cloppy a mix.

Don't be too technical........I'm a bloke........only once a year do I venture to that big white thing in the corner of the kitchen.

I think he means sloppy!!!! lol  The trick is to make your mix VERY stiff, looking almost too dry.  my Dad used to be a brilliant pastry and cake cook.  Mum used to do the dinners mostly.  He used to put a touch of cinnamon in his rock cakes, but only a touch, just so you get that aroma!!!!  

So add very little liquid til the mix just holds together, then try cooking just one rock cake.  See if it holds and what it tastes like, and if its a bit dry, just add a little more liquid at a time until the cakes still stand up when cooked!  Flat rock cakes won't win anything!  Also a perhaps a broken up sugar cube on top rather than just ordinary sugar, makes them nice and crunchy on top.

Thanks Auntie, what's the sugar bits called like they use in the bakers on the rock cakes, brain's gone blank again.  Looks like little crystals???

And please don't say sugar crystals, or I'll feel a right lump!!!!  (sugar lump that is!!! lol)  You used to be able to get them in different colours too!!!

Rock Buns from an old 1952 cookery book.

12oz plain flour & 2tsps baking powder
(or use SR flour and no baking power!)
pinch of salt
6oz butter or margarine
6oz sugar (granulated is fine!)
3 oz currants (but I just tip em in !!!!)
1.5oz mxd peel
.25 tsp mxd spice
.25 tsp ground nutmeg
1 egg
milk to mix

Heat oven to 200C (450F)  think that's right conversion!
grease a baking tray

Sieve flour, salt, (baking powder if used).
Add spices (I use cinnamon instead).
Rub in the butter or margarine and add the sugar (brown sugar can also be used, to give a different flavour), and the fruit.

Add egg, and mix with enough milk to give a very stiff dough.  Too much milk and your rock cakes will be more like pancakes!

Put mixture in rocky heaps on tins and sprinkler sugar over before putting them into the hot oven for 15-20 minutes.
