warm, humid, drizzly evenings and it calls for onion bhaji and tea. (well it was yesterday evening)
ingredients
aubergene - 2 small size verrrry thinly cut about inch square
onion - 1 medium verrrrrr thinly cut (shallots - 2 will be a great option)
cayenne pepper powder -  to your heat
salt - to your taste
gram flour - half a cup (I use a 200 ml glass as a cup)

mix aubs, onions and gram flour in a bowl and let it coat. in half a glass of water put it the chilli powder, salt and mix it. pour it in in the bowl while mixing it. add a lil bit more water so that the consistency is when you pick a lump and squeeze it, they should fall as smaller lumps (best description I can make). probably thicker batter rather than a dough consistency.
heat oil. grab a lump and squeeze on to of oil to get smaller lumps.
make a nice cuppa on the side.

(sorry for glass tea... all the cups were in dishwasher  :) )
One kid is handful. Two kids.... Example for chaos theory. Hats off to my mum who managed three...

Does the oil need to be very deep, or would it work shallow fried?

thanks. needs a good amount of oil. Have never tried shallow fry  :)

I love em.  I use whatever the lotty has to offer on any given day. They're splendid with mayo or mango chutters  :)

they look good and one of my favourites , can you use something else instead of the gram flour if i cannot get it or is it easily available .

all the big supermarkets sell it here.........I couldn't get it over there though :(
I used to get friends to bring some with them when they visited :D
