Jamie Oliver's Courgette pickle recipe

Makes 1 jar

Cost per jar £2.40 (fnar fnar!)

500g courgettes
2tbsp sea salt
500ml cider vinegar
1tsp mustard powder
2tsp black mustard seeds
1 tsp yellow mustard seeds
1tsp turmeric


Chop the courgettes into small cubes & put in a bowl with the salt. Cover with cold water and leave for 1 hour. Meanwhile, put all remaining ingredients into a saucepan, mix, bring to boil and simmer for 3 mins then put aside to cool.
Drain the courgettes and stir them into the cooled mixture, transfer to a clean jar then put in fridge. Best made a few days before serving.

No problem.  Forgot to say it only lasts a few weeks in the fridge, so I'm just doing one jar at a time.  Had the day off work today and so far have made a courgette & dill soup, and a beetroot and chocolate cake. So glad I only had one courgette plant come up in the end, Moneymaker, certainly is

Surprisingly I'm not hungry now! :lol:

Just about to ask re the keeping.... Mrs Smith thought it was a quick turnaround recipe, right as ********* usual
Made two jars, plus did some Q's with the leftover liquor

Don't get it on your clothes!!!!!!! Tumeric, blimey its deadly eh?

Test it in a week

ps added some sugar, couldn't help medling with the recipe

Don't need to leave it a week to test, 3-4 days and the courgettes will have softened nicely, not sure how long it will last as we're eating it constantly, goes nice with cheese.  Turmeric is indeed lethal, I have lost many clothes to it! Want to make piccalilli for the first time but still haven't got any cauliflowers so may buy some :lol: Have never seen those tiny onions (silverskins?) for sale anywhere, any ideas where I can get them?
