cabbage and chestnuts
« on: December 20, 2010, 23:23 »
Anyone got a good recipe?

We like quite plain, and everything I read has apples and spices in.  We just want an alternative to including garlic, fromage frais etc

Nothing in Delia's old book
I try to take one day at a time, but sometimes several days all attack me at once...

you could pan fry some pancetta, then when crisp add some chopped chestnuts and then add the shredded cabbage. cook until the cabbage is wilted.
Staffies are softer than you think.

that looks very similar to what I suggested but with added butter and alcohol   (personally I don't think you need the butter as the pancetta releases some fat - but the wine sounds a good idea  :D).
