Old parsnips
« on: May 18, 2007, 23:23 »
Hello, this is my first real question on here. I have had my allotment plot for 6 weeks and there are a few bits and pieces on there that I'm not sure what they are.
I dug up some plants today that I assumed were weeds as they were quite big and had yellow Achillea like flowers on. It turned out they were the BIGGEST parsnips I've ever seen. Massive woody things. They look a bit orangey and not very palatable.
Are they good for anything?
I'd hate to just chuck em as they are my first "crop" (even though they were already there!)

I don't reckon the flesh would be very palatable.

Would they make wine perhaps?  Failing that, my only other suggestion would be to boil them for the stock.
