Has anyone vac packed cooked beetroot?

The stuff they sell in the supermarket is cooked and the ones I checked out today had a B/B date of 2013

No, I haven't vac packed beetroot.

I haven't bought it that way for a while either but you may find there are helping ingredients in there too, to make it last that long, or there might not be. It freezes well after roasting. :)

Very useful to know Argyllie, thanks for that.  :)

Washed, skin on, spaced in a tray with some olive oil, a bit of sea salt and black pepper maybe a drizzle of balsamic vinegar but not necessary. Roast at about 190 °C for about 40 mins. Cool, bag and freeze. :)
