burnt jam
« on: July 31, 2010, 16:34 »
I've just had a disaster with my damson jam..it caught at the bottom of the pan and now tastes smoky..all 5 jars worth.
Any tips to stop this happening again? I thought that you weren't supposed to stir jam much while boiling? I use a non-stick pan so thought it would be ok.
Thanks
Natalie

I only boiled it until it reached setting point, exactly as i did when I made strawberry jam last week which was perfect..oh well, try, try again eh?

Most jam recipes I've seen say to stir occasionally to prevent sticking.

Did it really tell you to do THAT on the packet?

Doesn't need to be constant, but frequent enough.

Just to add to this.  I've done exactly the same thing in the past, now I sit (can't stand for long) and stir constantly after the sugar has gone in because it's surprising how quickly it starts to stick.  You can also feel the jam change to around the setting point.
