I change the soil.  "Soil" is a bit of a misnomer as I use 50:50 compost-heap and well rotted manure. The compost is not well composted, it still has stalk-bits and stuff in it.  The stuff coming out of the greenhouse after a year of cropping is lovely. Beautifully fine :) I heap that up and use it, for example, as pot-filler for over wintered Dahlias and Cannas when I start them off in the Spring.

Its much lighter to work with than my heavy clay soil.

An alternative is to use grafted Toms and Cues which will use a rootstock that is tolerant of build up of disease / nutrient deficiency that would normally be a problem with mono-cropping.

All in all I expect you would be best off growing Toms and Cues in your greenhouse every year.

Other crops include Melons, Peppers, Aubergines - none of those will "perform" as well as Toms and Cues in my experience, I grow them because I have space rather than as an alternative to Toms and Cues.  We also grow Sweetcorn in the greenhouse for an early crop.
