Rhubarb Cake
« on: September 23, 2006, 22:57 »
Am I going mad?  I was sure there was a recipe on here for rhubarb cake, but I can't find it.  I typed out the ingredients, but think I typed the wrong margarine amount, and now I can't find the original recipe anywhere.

I put some more flour in so the cake turned out okay, but now I've got a bee in my bonnet over the recipe and where it was!!!!

Please can anyone help?  Thanks

It might have been the fresh plum cake recipe - you can do that with rhubarb.
The plum cake is lovely.
Self-sufficient in rasberries and bindweed. Slug pellets can be handy.

Hi noshed, no it definitely said Rhubarb cake.  It's a similar recipe to the plum cake one though.  I typed it from the internet, but I typed 8ozs margarine, and it was probably 6ozs because that's what the sugar content was!

Perhaps it wasn't on this site!!!

Thanks for trying!

My Mum used to make an upside down ginger pear cake - and I've never found the recipe (in spite of the fact she was an inveterate note-maker) - any ideas? I've done a few searches but no luck.
Thanks

I don't suppose its this one?

Upside Down Ginger and Pear Cake

Ingredients
 900g can pear halves
 8 tbspn finely chopped preserved ginger
 8 tbspsn ginger syrup
 1 1/2 cups self raising flour
 1/2 tspn baking powder
 1 tspn ground ginger
 3/4 cup soft brown sugar
 3/4 cup butter
 3 eggs

Method
Fill the pear indentations with half the chopped preserved ginger. Lay the pears evenly over the bottom of a well greased spring form pan. Gently spoon or pour half the ginger syrup over the top of the pears.

Sift the flour, baking powder and ground ginger into a bowl. Stir in the brown sugar and softened butter. Add the lightly beaten eggs, and beat until creamy. Cover the pears evenly with the ginger cake mixture. Bake in a preheated moderate oven (180 degrees C) for approx 50 minutes. Test with a skewer. If it comes out clean, the cake is ready.

Turn cake out of the tin and cool on a wire rack with the pears side up. When cooled, sprinkle the remaining chopped preserved ginger over the pears. Drizzle the rest of the ginger syrup over the cake.

Serve warm with cream or custard. Serves 6 - 8

Tips
Upside Down Pear & Ginger Cake can also be served cold. It is very moist and keeps for a few days in the fridge.
