Title: Pickled Beetroot (adding pics)

I finally got my beets, pickling vinegar, jars and labels!

I have just top and tailed my beets and put them in a large pan of water and I am bringing them to the boil.  All recipes and books say to boil until tender, but they give absolutely no indication of time!

My beets are the size of large oranges, or small grapefruits. Can some one please give me some sort of rough time that I need to cook them for?

Sorry - I have another question.

My jars are sterilizing in the oven, but I presume when I add cold vinegar and beetroot it will not make the lid 'click'.

Should I warm the vinegar first?

I always use hot vinegar for beetroot as it makes the storage life longer and retains the colour.

Must be something in the air today -- I'm just going to get my beets out of th oven (roasted them) to pickle  :D :D

Am adding some cloves and cinnamon the the vinegar when it is being heated, to see how that comes out  :ohmy: Oh, and a bit of shallot as well  as my duaghter said she likes the combination so am giving it a go  :ohmy:
