Eventually my 2 cucs are starting to produce fruit,size of a pickled gerkin, and I have check the seed packet and it says they were F1 seeds.  Does that mean I will have only female ie sweet tasting cucs or do I have  to do something to ensure that?  Sorry for all these questions but I suspect 20 years from now I will still be asking questions.

F1 does not necessarily mean they are all female. It should really say on the packet.

What variety are they?
