Victoria jam has not set.

My first attempt at making jam and it has not set.  Can I recover it and make it set?

Yes, you can tip it out and boil it up for a bit longer  :) - make sure you sterilise the jars and lids again.

I've studied the jam making on this forum and worked out that firstly I had too much water and secondly only cooked it for ten minutes also that some pectin might help.  I picked a cooking apple, cut it into small pieces, placed it into the jam and boiled it all for forty minutes and its now perfect so thanks to those who gave me interesting advice.

BML - if you have an iPad or similar, have a quick look at Vivien Lloyd's "First Preserves - Jams" eBook. It is around a fiver and although short, deals only with traditional recipes. I tried her Damson Jam recipe and got it right first time.
