as discussed yesterday - here's my recipe for my cucumber (bread & butter) pickle

3 large cucumbers
3 large onions
2 oz salt
1 pint vinegar (i use redwine / white wine vins)
1 lb brown sugar
1/2 tsp tumeric
1/2 tsp cayenne
pinch cinnamon

half cucumber lenthways and  slice thinly - do same with onions

layer a colander with cucs & onion - and sprinkle the salt between layers.

put colander into a bowl (to catch juice) weigh down the veg with plate and leave in fridge overnight

next day - press fruit to get rid of any excess juice
then pack into steralize jars.

in the meantime - put all the other bits into a pan and heat gently unti you've dissolved the sugar

pour over the veg in jars and seal - you are supposed to leave for a month before eating - but my doesn't seem to last that long  :roll:

It really does sound good splodger :!: I grew dozens of mini munch cucumbers this year. Had to give loads away and couldn't find a good recipy for love nor money.

Your recipe sound very sweet.  
Does it make a sweet pickle like onion marmalade :?:  
Can I safely cut down on the sugar  :?:

How do you serve it  :?:

i just drain of the liquid and serve on the side - or in sandwiches or tossed in a salad

if you reduced the sugar - it would be very acidic - you'd want a bit of sweetness - or change the vinegar

befote i made up jars of it - i made up a small ammount of the liquid - and added toms, chillies, garlic, cucumbers and onions - added some o.oil and lemon - and used it as a marinade - for a mixed salad - it was good for me - so i decided to make up a batch

i'm not a great fan of pickles - not keen on too much vinegar - but this suits me fine - and it's very easy - i like easy
