The five gallons took 17 days to go from 1.070 to 0.990.

From memory, this is usual, and after a few Campden Tablets crushed up being chucked in, it seems to have quietened down almost immediately.

Should be OK to taste later in the week...

(It doesn't seem to keep well, because either we tend to drink it too quickly, or we drink it too quickly...)
