An abundance of Spinach!!

I seem to have a fair amount of spinach at present at was wondering if people had any ideas for some recipes im lacking in inspiration!! Although i am going to do some spinach, goats cheese, sunblush toms on puff pastry! Yum

Fresh spinach salad with balsamic dressing and goat's cheese is always great. I also throw a handful of chopped spinach into soups at the last minute.

Wilt in the pan before adding an egg, scramble.

When cooked, mash into potato with grated cheese and chives or spring onion.

Add to any soups, stews or tomato sauces.

Spinach and feta filo pie - the best meal ever!  I'm hoping ill have enough to make one this week (but I do keep cutting it for wilting with fish, for stuffed mushrooms, for greek rice with feta .......).   I love spinach!

wilt with olive oil and garlic, cool and freeeze...we use it upto 6 months...great in pastas, curries,dhals,pastry fillers, with scrambled egg
