How do you cook spinach?

I don't mean boil/steam, etc., more about what do you season it with to help the flavour. I tend to steam most veggies but always find spinach comes out pretty tasteless and boring with just a touch of salt. Anyone found another kind of flavour helper that works well with spinach?

I put raw spinach into my curry a few minutes before it's ready to dish up. Just long enough for it to wilt.   It's good like this in a casserole too

Creamed spinach with grated nutmeg on is lovely as a side dish.  Cream of spinach soup is also gorgeous  :)

Olive oil or a knob of better in the pan add crushed garlic, some chopped chilli to your taste and add sliced or baby leaf spinach stir fry very briefly. add a squeeze of lemon and a little black pepper and serve.

You could always make the Greek and spinach filo pie too which is delicious. Can't remember the Greek name for it off hand but I am sure MOS will tell you. :)

 Wilt first and add egg for a tasty scrambled egg on toast.
When steamed squeeze out excess moisture add to mashed potato, chives and grated cheese and whiz with a hand wisk.

Wilt the leaves and squeeze out all the liquid. Get a Japanese bamboo rolling mat - usually for rolling sushi - and place the spinach down the middle. Roll into a long thin snake. Chop into 2-3 cm pieces and stand on a plate. Toast some sesame seeds - careful cos the burn easily - and grind with a morter until fine. Sprinkle on top of the spinach. This is delecious - and a really intense flavour.

Ooh, you've all given me some really nice ideas to try now, so thanks for that. Last year's spinach is currently going berserk in my polytunnel, growing leaves the size of rhubarb, and we're struggling to keep up with it, so it'll be nice to have some different ways to eat it.

I put it in my carbonara type pasta dishes too. I just like the colour contrast. I don't really like beige food  :tongue2:

Garlicky cream of spinach soup is amazing. Made thick it's sort of life affirming. Think Popeye  :lol:

It's also great on pizza - add fresh leaves and they will wilt as the pizza cooks.
