2 small onions
25g butter
1 large spring onion
1 teaspoon of ground garlic
Sea salt and pepper to taste
6 sweet potatoes
800ml veg stock
5 large fresh kale leaves
Fry onions and garlic in butter.
Add potatoes and cook for 5 minutes or until soft.
Add kale and stock and simmer until really soft.
Blend until smooth, season with sea salt and black pepper.
Add enough milk to make it into a soup consistancy.
Serve.
This makes enough for 3 maybe 4, depends on how much you eat. It comes out a moss green colour but don't be put off, the flavour is fantastic :D
