I candle eggs at 7 days and then at 17to 18 days. The point of candling is to get rid of any infertile eggs as they can explode in your incubator.

The black sack is the air pocket isnt it. Good luck with your French eggies. All my chooks are French but I am hoping that Foxy and Babe and Mumsy will bring me some English eggies in September
Of all the things I've lost, I miss my mind the most!!

The black sac sounds like it might be the air sac which should be in all of them. The fertilized ones have a little floating black blob floating in them with the veins. It grows really quickly and just a couple of days later you can sometimes see its eye! You can also see it move as it gets a bit bigger. I would give them a bot longer before rejecting the duds (do reject them as they can explode if you don't).
Be like a duck. Calm on the surface but always paddling like the dickens underneath.

14 days probably ok provided they don't get infected as then they might explode (not that I've ever had it happen). The ones that are fertile but die due to an infection get a blood ring in them which really looks like it sounds with a crisp ring rather than the fuzzy blob and veins.

Afraid that if by this stage (about 11 days?) they have nothing in them but the air sac then they are not fertile and I would take them out
The air sac is in all eggs fertile or not. It gets bigger as the embryo absorbs nutrients from the albumin and water evaporated through the shell. It is where the chick first pips into on its way out and it starts breathing air rather than absorbing oxygen through the membranes lining the shell. This is when the egg starts chirping in the last couple of days
