A friend gave me this recipe to try, and I thought it made a really nice change :)
2 large grated carrots
1 onion chopped fine
3 tablespoon breadcrumbs
100g chopped mixed nuts
1 teaspn mixed chopped herbs
small handful grated cheddar
2 rounded tablespns peanut butter (I used a smooth one)
Salt and pepper oven 190C
Lightly toast the nuts in a dry frypan, leave to cool, while you grate the carrots and chop onion.
Then mix everything together seasoning well.
Press into a 1lb loaf tin, and bake for about 30 mins, till a skewer comes out clean.
Serve hot or cold.
I'm going to try making it into patties and dry-frying them, and serve in burgerbuns :D

I can recommend Vanilla Risotto for pud.
Not for the health conscious but it is a Special Day

I love nut roast and haven't made one for ages - will definitely give this a go, as my daughter is vegetarian. If there's any left over, nut roast makes a nice veggie alternative to pork pie the following day!

sounds delicious that's my Christmas dinner sorted made with homegrown carrots onions and herbs and foraged nuts.

Just a little update. Made this as a trial for Christmas Day and used chilli spicy peanuts. The result is yummy.

This sounds great, I have a very veggie friend so will try it out on her, hopefully she will be impressed. :blink:
