Homemade candied peel

I've bought oranges, lemons and limes to candy, but how long does it keep in the fridge? - some recipes say it only keeps for 2 weeks, which doesn't seem very long  :unsure:

I don't really want to make my panettone yet, though.

I would have thought a long time,that's the idea of it after all. I did have a recipe once but I can't remember which book it's in, I'll try & look it out & see if gives a keeping time.

Ha just found it, the book was here in front of me. Marguerite Pattern, Jams,Pickles & Chutneys. No time for length of keeping, just says crystallised fruits, leave in oven, gas 1/4/ 225 F, until crisp or roll in granulated sugar,angel ica- store in dry jars in dark place to retain colour. Candied peel, drain & dry in cool oven,store in covered jars.

Oh another book, preserving,Dorling Kindersly says shelf life, 2 yrs in syrup,1 year with a crytalized finish.

That's tomorrow's job sorted then  ;) the panettone can wait 'til nearer the day!

I make panettone every year (with variable results!) but it'll be the first time for peel - simply because neither of the supermarkets I can get to, have nice peel in this year  :(
