Cooking green pumpkin
« on: July 26, 2023, 02:41 »
I'm starting a mid-season growing experiment with pumpkins (this post isn't really about that; I'll post about it on my diary page, and add a link to it later). Link added:  https://chat.allotment-garden.org/index.php?topic=134417.msg1586100#msg1586100

I was reading John's post about how to grow pumpkins here:  https://www.allotment-garden.org/vegetable/giant-pumpkins-growing/.  Reading about pruning off most of the pumpkins if you want a large one (Jack o' Lantern for example), I was thinking about the waste if the immature pumpkins were simply composted.

Can they be eaten?  Are they any good?  Turns out, Yes . . . and Yes!!   Read about it here:  https://foragerchef.com/how-to-cook-a-green-pumpkin/  I wish the recipe for green pumpkin pie was included, maybe I can find it somewhere else (or maybe I just missed it on that page?  I need to look again).

Added later:
Well that wasn't hard to find (still wish he had just linked to it).  Here is the recipe for green pumpkin pie (you have to scroll down a bit to find it): https://foragerchef.com/green-pumpkin-pie/

The idea of using green pumpkin reminds me of my mother using  the rind from watermelon (cleanly cut from the red flesh, rather than leftover from eating watermelon like a heathen).  She made watermelon rind preserves - a wonderful reminder in mid-winter of the previous summer.  Now that I think about it, I will post that here as well (separate post though; here: https://chat.allotment-garden.org/index.php?topic=137941.msg1586087#msg1586087 ).
