Beetroot help please

Hi guys I have 3 rows of boltardy beetroot on the plot and sowed 3 seeds together at each location in the row.

They have pretty much all germinated and are 4-6" tall ish, some higher.  Do I need to thin them out or will they produce smaller beets being close together?

I wanted some small ones for pickling, some for salads and to leave some bigger for chutney later in the year.

I also sowed a free packet of soloist which are oviously not an issue.

If I have to thin some out are the leaves ok to eat in salads to give some colour and flavour?  And can they also be steamed like chard leaves?

I thin beetroot when they are large enough to be useful and they cope well like this. The ones that are left get to a reasonable size, but not too huge ie about 2-3 ins across

I use decent looking baby leaves in salad but have never cooked them tbh
