[Beetroot queen]

I am after a recipe as simple as can be so i have no excuse not to bother. 

Its for our florence so

Dairy free, we do use oat milk AKA oatley
Soya free
Egg free
Totally nut free both peanuts and treenuts
Banana free

Shes not great with cinammon so avoiding that too.
Lidl have a waffle maker coming in and i thought would be good to try it makes little animal waffles, giraffe, lion and elephant.

Any ideas, a lot of US sites have stuff which is no easy to source
