I've got a couple of books on chickens, but none of them really show the insides - just the external features. I don't know whether you could get a book on illnesses and the such which may show the internal structure better. My Aunt has got a book like it, but I can't remember what its called and I believe it had some diagrams and the such like. Other than that I don't know any other book off the toop of my head. Sorry.
