small potatoes..what to do with them?
« on: September 03, 2010, 12:58 »
Does anyone have any favourite way of using the very small maincrop potatoes?

other than just boiling/steaming  them in their skins

We just like them sauteed in a little butter and olive oil!  or in a potato salad, or the dog eats them!

They're good as wedges too. Washed, not peeled and cut to size, tossed in olive oil, salt, pepper and maybe some chilli flakes or turmeric and cooked in the oven for about 40 mins. Maybe a bit less if they are very small. Its what I am doing today with the last of the British Queen. :)

Argyllie, when I say small, I mean small.........cooked whole they would be smaller than wedges, I just begrudge throwing them away

But they are all good ideas :)

Steam or boil in their skins, crush lightly, toss in oil and salt and pepper.....and chilli if you like it....and bung in a hot oven till the edges are crisp. Yummy. :)

Leave 'em whole then, as I say its what I'm doing today. :) 3cm across is about the average size.

I steam them and then use in lunch box potato based salads.  Tuna, some french beans, halved cherry toms, olives, spring onions in good mayo with the potatoes is a good start. They stand up to the traveling better than cut up bigger potatoes, and make for dainty eating.

Fry 'em whole, either deep-fried like chips or shallow-fried like sautéed pots without the pre-steaming.

I use mine in a Vegetable casserole that calls for diced potato as part of the ingredients.

I have a big deep freezer and stash a lot of food away over summer for winter, often as soups, rtratouille, stews.  Good way to deal with crazy surpluses of vegetables.  Also makes for quick/easy cooking when people suddenly come around.

I made the best soup with vege stock with my own shell out beans and a few slices of chorizo sausage and then threw in lots of small spuds for the last 10 mins cooking.  Then put in 2-3 person pottles and froze it.

The spuds were a purple skin/white eye variety (one of the NZ maori potatoes) and it was great in middle of winter to have such a tasty and fun-looking soup with a good protein content (mostly from the beans).

I do what Tosca does and also add some bacon offcuts and courgettes and garlic - all my kids wolfed it down even the veggie haters - you could probably sneak a few other veggies in like grated carrot or aubergine
