Could someone tell me how to make runner bean chutney/pickle please.

Green Bean Pickle
Ingredients

2 lb runner beans, sliced
2 lb muscovado sugar
1 ½ lb onions peeled and chopped, not too finely
1 ½ pints vinegar either malt, white or cider (malt gives a better colour)
1 ½ tablespoons cornflour
½ teaspoon salt
1 teaspoon turmeric
1 teaspoon mustard powder

Method

   Cook the sliced beans in salted water till just soft then drain
   Cook the chopped onions in ½ pint of the vinegar till soft and transparent
   Place beans, onions and sugar in pan with rest of vinegar and boil  for 15 minutes
   Mix the mustard, turmeric, salt and cornflour with a little cold water and add to the pan
   Bring to boil and cook for further 15 minutes till  thick, stirring if necessary to prevent scorching
   Pot into warmed jars but do not put lids on until completely cold

It is wonderful stirred into plain boiled pasta for some reason!

I made my second batch of this today, as the first lot went down so well!  We like it in a sarnie with a thick layer of Co-Op's own brand Philadelphia (currently two for a pound  :lol: ) - I will be sure to try it with pasta though!

                         I am intending to make your Pickle, but was wondering about the amount of Sugar ?   2lb?  Seems a lot???? :?  :?

I used just under 2 lb for mine - well, a kilo instead as I was a bit too skint too buy three 500g bags instead of two  :shock: Worked just fine - we've made two batches of it so far...

Apologies Ladybird for late reply, been busy.    I know that the 2lb of brown sugar seems a lot but the pickle is quite sweet and caramelly...try it with less, don't think it should affect the set as it is not like jam.
