I had a recipe for a cold dish, made with pearl barley, tomatoes, onions and cucumber (I think) I canīt find it anywhere, does anyone have a recipe that I can make that can be served cold?

I just googled "recipes for cold pearl barley dishes" and loads came up.  I've never had it cold but there were loads of salad recipes. I'll go back and have a closer look as they sound lovely.

I love the stuff and use it loads, albeit usually in hot dishes. When I made a puy lentil salad recently I replaced some of the lentil quantity with pearl barley. Yum. :)

I have a chick pea recipe (tomato, onion, mint, parsley) I will try that, substituting pearl barley for chick pea.

I prefer the pot barley myself - all the bran fibre is still on and makes a more filling dish.

It sounds like a recipe for a couscous or bulgar wheat salad.

Popping pearl barley salad or pearl barley salad tomato cucumber into Google thorws up a lot of suggestions, "salad" is the magic word for getting the results.

I love mint with pulses and/or grains - really lifts the flavour, especially with a good dressing  :)
