I had a tray of chicken thighs out to cook for dinner yesterday and wondered what I could cook for a change, which didn't involve a trip to the shops. Chorizo and rice seemed to be a good starting point and I ended up making a sort of paella, like this:

All quantities are approximate.

1 tray chicken thighs, skinned, boned and cut into three or four chunks per piece of thigh meat
1 good sized red onion (or could be white), chopped quite finely
2 - 3 cloves garlic, sliced
100 g cooked chorizo, sliced
250 g easy cook brown rice (could be white, or could be any rice)
1 red pepper (I used a ramiro cut into rings, otherwise just a red pepper cut into strips)
1 tin chopped tomatoes drained and liquid saved
500 ml chicken or other stock made using the saved tomato juice as some of the liquid
1/2 tin chickpeas
1tsp turmeric
glug of olive oil
Salt to taste

Pour olive oil into a good wide shallow pan and cook the chicken chunks until they are well on the way to being cooked. Add the chorizo, onion and garlic, stir in and cook for a minute or so to allow the chorizo to start releasing its paprika flavours and oils. Add the sliced pepper and rice and stir in well to coat the rice. Add the drained tomatoes, turmeric and chick peas and stir again to combine. Cook again for a minute or so. Add most of the stock, cover and simmer until the rice is cooked the way you like it. I added the full 500 ml and found it too wet so finished the cooking lid off to evaporate some liquid.

I do something similar but sometimes use half a dozen spicy sausages, cooked and chopped into 5 or 6 and a handful or 2 of mixed prawns/ mussels
