Cayenne is meant to be harvested when red. It will never blow your head off but it's tasty, and the plants are so prolific and healthy; it is a trouble-free variety. I dry them to make my own cayenne pepper, which is a useful addition to the spice rack
If you want to grow a hot one then you have to sow a hot one
