 :D well a while back i posted on my dissapointing eclairs today i just anted to say i did profiteroles and they are great , light and crispy im just waiting to last min to fill and put the chocolate on ahhhhhhhhhhh

My mum, who is an excellent cook, has never succeeded with choux pastry.  She has no idea why not; it's just one of those things!
I try to take one day at a time, but sometimes several days all attack me at once...

Yep, we all have our Bete Noir in cooking that we have to pluck away at.

Sometimes it is all down to finding the correct recipe.
Mine was yorkshire puds, but being the stubborn little cook that I am, ::) I plucked away until I found the right recipe.

DO have to say that making my own pasta is a step toooooooo far tho. :nowink:

Pasta making is easy - but very time consuming to keep passing it through the machine, and I could never be bothered to roll it out by hand with the huge rolling pin  ::)  :nowink:

and really not worth it IMO you can get really good dried pasta nowadays ( as well as a lot of rubbish :( )

It must really be a bete noir, Mrs Ball. Pasta is dead easy, but again, once you have a good recipe. Too much oil or eggs and the dough won't hold together for rolling.

Once you have a good recipe and it holds together, do huge batches at a time, and if you have a dehydrator, dry (not cook) them and store in bottling jars for instant winter use.

Mrs Ball i advise feet up cuppa tea and a sticky bun , we should have a post with all the recipies we never get perfect and how we do them so others can show up where we went wrong , i think i must be on a roll i did some garlic swirl buns to go with the meat balls and they were great , i started them off earlier in the day and let them do their own thing rather than rely on them proving in the said hour , lot less stressfull i must say .
