Can frozen raspberries be made into jam
« on: July 20, 2010, 11:48 »
Hi, I wonder if anyone could tell me if you can make jam from frozen fruit as i have an abundance of raspberries even after making a batch of raspberry wine, but they have been frozen?

We do it successfully with all sorts of frozen fruit. When I'm short of time, I'll even freeze currant juice I've cooked and filtered so I can jell it later.

Most of my jam etc comes from the freezer I never seem to have the time when I've picked it also the freezer reduces the cooking time as the fruit comes out soft.

Out of interest, can you use late rhubarb for jam? I know you shouldn't eat it because the acid can give you tummy ache, but cooked for ages as you would, and the fact that you only eat a small amount at a time...... Only ask because the recent rain we've had has sent it into triffid mode, and I have some in the freezer, but not enough to bother making jam with.

When using frozen fruit for jam making, you need to add a little extra fruit, as when freezing fruit will lose some pectin, and the extra fruit counteracts this.

So i take it that if i was to buy a bag of frozen fruit from asda or somewhere i could use that just the same, as i didnt get that much of a crop from them this year

Don't see why not  :)
I try to take one day at a time, but sometimes several days all attack me at once...

Don't know how much fruit is at Asda at the moment but Tesco have it on offer three for £5.
Asda very often have fresh fruit cheap. :)

Does anybody have a recipe for mixed berry jam, i have got a bag full of frozen summer fruits from the local garden centre and they are cyrrently in a bowl defrosting, can i out them straight in a pan now and start cooking or should they be fully defrosted. And how much sugar do i add to how much fruit?

I have good packets of pectin aswell (thanks liz) and some jam sugar with added pectin.
