I've got load of courgettes in my freezer, which have just been halved and cut into slices. I was planning to use them for soup, because I have found a couple of courgette soup recipes that I really liked. But I was wondering - can you actually cook them in the normal way as a side veg when they've been frozen, or would they just go horrible and mushy? I can certainly use them all as soup, but if they're also usable as a side veg that does give me one more veg option.

Personally I think they would be too mushy, but I might be wrong.  I only use my frozen ones in soups and curries and things!

I agree they're likely to become rather too mushy to be a firm side veg on thawing.

Yep, too mushy for sides. I just used mine for courgette (zucchini) bread.
