I've got some cubes of frozen squash (Uchiki Kuri) in my freezer, but I'm not sure how I can use them from frozen. Should they still be ok to roast as cubes, or are they best used purely in casseroles/stews?

I should think the lumps you have will do for both jobs.   I froze a half Uchiki Kuri, defrosted it and cut it up for soup with added carrots and Jerusalem Artichokes, I then refroze the soup gloop.   

I'm going to try it heated up of course for my tea after the shower 'er indoors has been bugging me about!       Cheers,     Tony.

Be intrested to know if you tried roasting this and it worked?

I normaly only use frozen for soups and such as the cell structure breaks down and it goes all mushy before it crisps up.

However i have only ever tried with a pretty wet pumkin rather then a firm squash.

Did you have a go at using it and did it work?

Roasting uchiki kuri really brings out its flavour. I roast the cubes first, then freeze. As stated, they're a tad mushy when defrosted so perfect for soup.
