frozen strawberries
« on: June 04, 2011, 20:33 »
Hiya!

Can i use frozen strawberries to make jam? I have loads and loads of stawbs which i have hulled, wiped nad thrown in the frezzer as i don't currently have time for jam amking (although will do in a week or two) can i use these strawberries for Jam? would i need to ammend the recipe at all to account for freezing? I had planned on just having stawberry jam no other fruit mixed in (1kg of strawbs 1kg of sugar juice of lrg lemon) I've only ever made Damson Jam and even i managed to get that to set! I'm branching out but have no clue what i am doing other than reading the WI's Preserves book.

Thanks in advance - I know you guys will come up trumps, as usual!
Kate

Yes you can but I believe there has to be some adjustment for the fact they were previously frozen.
I try to take one day at a time, but sometimes several days all attack me at once...

In my experience it will not set without adding extra pectin if you use frozen strawbs.

I am off work on Wednesday so I might have to make some scones as my Mum made some jam this weekend passed with frozen fruit.  mmm something to look forward to (may be really naughty and get some clotted cream too).
