Title: 2nd try at Christmas cake, stage 2.

Made my own marzipan.  .  .  .now to apply same.  :ohmy:
 
Never liked apricot jam so.  .  .  found some crab apple jelly to apply to the top of the cake.  Found this didn't have the correct adhesion properties for the sides so broke out a jar of damson jelly.

Marzipan, quite a bit more flexible than the 'taylor made' and quite a job rolling it out, tried rolling pin, nah.. :mad:..tried wine bottle filled with iced water, bit better,  Now finally to my question,  it says 'in the book' to leave the cake to harden off for a couple of days.  Does this mean 'open to atmosphere' or in an airtight container? :unsure:    Cheers,   Tony.

I do mine open ...it will sweat in a tin, instead of dry.

If it doesn't seem to dry off paint it with egg white and leave that to set......it's agood tip for whrn marzipanning and icing at the last minute  ;)
