:tongue2: do u really have to wait 6 month plus before you get to drink any home brew as some recipes state even longer and the OH ain't keen on 10 to 15 demijohns sat in a spare bedroom for that amount of time

the reason for letting home made wine mature for 6 months is to let tannins and other chemicals that are present in the wine break down.
you can drink your wine as soon as it becomes drinkable.
wines made from fruits such as elderberry and blackberry usually take about a year but wines made from kits will be drinkable earlier.
I use a turkey baster to sample the wine and if it is good to drink then i bottle or drink it.

If you freeze the fruit first, it aids the fermentation process and makes the wine mature faster. I think the way it breaks down a bit on defrosting helps speed everything up. This was a tip I picked up from an old wine making book I bought in a charity shop and it does seem to work :)

I am soooo looking forward to the elderberry in the sheet cupboard which will be bottled in Oct. So is the neighbour. Hubby does not mind the 12-16 up there at the mo or the new 4 bubbling in the corner of the dining room....or the 30+ bottles upstairs either.

You need to plan ahead for the next 30 years. Buy a shed.
Or
Buy a 30 bottle wine kit thats ready in 7 days. Like Cellar 7. Google it.

I know it's a pain in the A**e waiting for a wine to get drinkable. >:( over the years I made wine & beer I've never had enough behind me to make a stock of it. I'm trying to get some stock now...but it's hard when folks come around and know you brew.
As for freezing I do most of mine like that..if possible, it's also great for building up enough fruit to make a wine...I pull rhubarb and stick it in the freezer until I want to make it....at the moment I've 12 kgs in the freezer ready for the next 25lts....also 5kgs of plums from last year.
