Hot Cross Buns - bread machine recipe

The Buns

210ml (7½ oz) Milk
1 egg
450g (1 lb) White Bread Flour
1½ tsp Mixed Spice
½ tsp Ground Cinnamon
½ tsp Salt
50g (2 oz) Caster Sugar
50g (2 oz) Butter
1½ tsp Dried Yeast
75 g (3oz) Currants
25g (1oz) Sultanas
25g (1oz) Mixed Peel

The Crosses

50g (2oz) SR Flour
25g (1oz) Margarine

The Glaze

2 tbsp Milk
2 tbsp Caster Sugar


  • Pour the milk and egg into the bread pan.
  • Sprinkle over the flour, ensuring that it covers the liquid.  Add the mixed spice and cinnamon.  Place the salt, sugar and cut up butter in separate corners of the pan, and the yeast in the centre.
  • Set the bread machine to dough programme and press start. 
  • Add the dried fruit and peel 5 mins before the end of the kneading period (or use the fruit dispenser if the machine has one).
  • When dough cycle finished remove the dough from the machine onto a lightly floured surface. Knock back gently.   Divide into 12 pieces.  Shape into balls in your cupped hands. Space out on baking sheet and cover with oiled cling film.  Leave some where warm to prove for 30-45 mins or until doubled in size.
  • Preheat oven to 200 C / Gas 6. Make pastry for crosses.  Rub margarine into flour until it is like bread crumbs then add enough water to make a soft dough which can be piped.
  • Spoon the pastry dough into a piping bag (I just use a poly bag and cut the corner off) and pipe a cross on each bun.  Bake buns for 15-18 mins or until golden.
  • While baking put the sugar and milk into a saucepan and dissolve over a low heat.  Brush the glaze over the hot buns and cool on a wire rack.
