hi with every thing going on this year with floods , mum having a hart atttack and me just recovering the use of my right arm i have left about 20 demijohns full of wine with air lock or seal corks in the garage and not bottle it up will it by ok to bottle up still as i have no idea if i should use it smell ok but it is a bit strong to the taste  :roll:  :roll:  do not want to poison any one  :twisted:  :twisted:

- That's the crucial bit.

Is the strong flavour due to need for further maturing or the wine turning to vinegar, being left on the yeasty sediment for too long, oxidising, etc.? (did your airlocks dry out?)

ONE DID THE REST OF THE AIRLOCKS WHERE FIND OR HAD SEALED BUNGS IN THE TOP

I've had wine not go off immediately (probably several weeks) from a dried out airlock, but I may have been lucky, and I've left wine for a few months on the yeast and it's been OK.
