I read somewhere some one had made pineapple wine

As my local has lots of them at 50pence each, I thought there is just so many I can eat, so why not make some wine from them

Problem is I cant find the posting or who made it

Ideas/suggestions please

choice of 2:
sweet wine

4 pineapples
3.5lb sugar
2tsp citric acid
yeast + nutrient

top and tail pineapples. Slice and put in pan with 1/3 gallon water and boil then simmer 25mins. Strain onto sugar in fermenting bin, add 2/3 gallon water & citric acid. Add yeast & nutrient when cool enough.
Cover, stir daily for a week in a warm place. Rack into demijohn and rack again when lots of sediment happens. Bottle once clear.

option number 2

Liqueur

Slice 1 large juicy pineapple very thinly, sprinkle with a little sugar & leave 24hours.
Press out juice and measure. Add equal amount of sugared brandy (2oz sugar per 1/2 pint brandy).
Put in jar with a few slices of pineapple & leave for 3 weeks, strain then bottle.

Thanks, just going to make a demi john (about a gallon)

So guess I modify the pineapple ? (not so many)

Seems a lot of sugar, I usually use 1 Kg per demi john

Not too keen on liqueurs

I'm not too keen on sweet wine, so put less in.
I tend to mix gooseberry with apple to make it more palatable

Did mine a little different, requires 2 pineapples:
1 pineapple, litre grape juice, nutrient, yeast, sugar to 1.100, water for 1 gallon (5 litres).
Ferment in bucket until SG = 1.010, or something like 5 days.
Peel and slice/chop 2nd pineapple and add to the fermenting liquid.

Leave to ferment, then transfer to a DJ to complete.

Find that the aroma of pineapple is retained if one pineapple is added late.

Mine are never "simple" I half suspect that I added a pear or peach (or two) to the initial mix.
Fair time back so cannot recall precisely.

If no hydrometer then as you say try 1kg of sugar to a gallon, it should be about right, likely a dryish wine. That was what I did until I got the hydrometer.

SG of 1.110 should result in 13-14%(ish)
