We had a massive 5lb one a few years ago it was extremely woody. It did make star letter in the good food mag though  ;)

I think if you'd dug it up before the new growth started it would've been ok, but I expect it'spretty woody now - shame, you could haved covered a whole cottage pie with parsnip mash

It's worth a try roasting it if you are using the oven for something else. Sometimes the core is woody but the rest is OK.

Attached pic is of the last of my parsnips harvested a few days ago (they were starting to re-sprout.)

As you can see, they are not of exhibition standard  ::) - the largest one weighed just over 2lbs and was absolutely fine roasted; I don't sow mine until relatively late so don't get real whoppers (well, that's my excuse anyway!  :lol:)

I'm still harvesting mine and while it will be woody in the middle, as others have said it will be edible.
I try to take one day at a time, but sometimes several days all attack me at once...
