My fav pumpkin soup recipie is:

800g pumpkin
1 tblsp olive oil
1 large onion
1 1/2 ltrs vege stock
2 bay leaves
chillies to taste.

Cut the fleash off or hollow out the pumpkin into chunks.

Heat oil in large pan and fry onions for 10 mins until soft but not brown.  Add chunks of pumpkin and cook for 3 mins.  Add chillies to how spicy you like it.

Add stock and bay leaves and bring to boil.  Simmer for 20 mins or until pumpkin is tender.  Remove bay leaves and liquidise until smooth.

Return soup to heat and check seasoning.  Bit of ground black pepper and add more stock if too thick.  Bobs your uncle!!!!  Blooming yummy. 

A warning soup for winter and bonfire or halloween night.

Just made some for tea today: pumpkin, couple of onions, couple of cloves of garlic, one red chilli (largely de-seeded), chicken stock, small sloosh of cream (left in the pot), loads of black pepper and some "Blacksticks White" blue cheese crumbled over, with granary bread  :) :tongue2: :D

We live on this soup in the winter

Sweat some onion, garlic, celariac in olive oil
add pumpkin and stir, then add veg. stock,
salt, plenty of black pepper and a handful
of red lentels......no measures just throw it in.
