....what's the best way to store it?

I have (or should I say had  :tongue2: ) a 6lb one and I only used 750g of it, so the rest has been cling filmed and put in a dark, cold garage.

Do you think it will keep and if "yes" how long do you reckon I have?

i kept my pith free pumpkin in the fridge for about a month...... for freezing you can roast or soup it.

you could puree it and either freeze it or bottle it heat treated , then you could make pumkin pie or soup, I think I have seen a recipe for pumpkin bread too but I can't remember where. I'll look it up if you are interested. :)
would have been enough for a crumble!

Freeze mine, last night I cut up the 40lber, dont think the wife has gone into the freezer yet  :?

Once cut into, I don't find pumpkins last longer than a month, if even that long regardless of how it's stored. Best, like the others say, to freeze or bottle the rest.
Uncut pumpkins will last several months but I find the insides are already shriveling.

Wow!  :shock: Thanks for all your replies so far.

Now here is question #2 - how do you freeze it?  Total novice here and this is my first pumpkin that hasn't been carved up for Halloween!!!

Hi

I would freeze it by part cooking it with onion, herbs and a little water until it's lumpy, and then freezing the resulting dish in several different boxes.  Then it's ready to be used bit by bit for risotto, soups etc.

Now I take life as easy as I can, so carve up the pumpkin into chunks minus the skin, pop into bag and freeze, I also make a sweet pumpkin pie with whiskey cream, dont fancy herbs, onion etc in that  :wink:

That's exactly what I do ... I only ever use pumpkin & squash for roasting or soup so freezing this way works for me  :)  Quick & easy
