When I grew some, hubby didn't like them, so I froze them then used them for soups in the winter.

When they freeze the water molecules will separate from the starch so you couldn't just freeze them and pull them out and treat them as normal, they'd just be mush, but they'd be fine in soups, especially blended soups where you just need the thickness.

I may have boiled them a bit first, but it was about 5 years ago.

What Mrs lev said about the water molecules is true.  I have the same trouble trying to explain the same thing to people about freezing tomatoes.  Our friends in the village tried it and Harry said they were horrible!  I think he tried them instead of fresh ones!

But I don't remember the pink fir apple turnng to mush.......

Don't suppose you have a dehydrator because sliced up they dehydrate beautifully.

Pink fir apple have a lower moisture content than many other potatoes.

Last time I grew them (3 years ago) we had an amazing crop and I froze a lot down as 'oven chips', which worked very well indeed.

Blanch in boiling water 3 minutes, drain and dry, then shake up in a plastic bag with a tablespoon of sunflower oil and some thyme.

Open freeze on trays, then bag up when solid. Cook from frozen about 30 minutes.
