Try this overnight  No-knead recipe.

http://www.kingarthurflour.com/recipes/no-knead-crusty-white-bread-recipe

I have made this a few times and it(dough) keeps in the fridge for a week.
Tips, don't add all the water at once, I find American recipes can be wet, maybe their  flour absorbs more than ours.
Having said that, this is a very soft dough.
good luck.

Interesting, gtdevon. At the end of the page you link to, it says:

Our thanks to Jeff Hertzberg and Zoë François, whose wonderful book, "Artisan Bread in Five Minutes a Day," is the inspiration for this recipe.

That's the book I use. All of their recipes I've used so far have been absolute winners. These no-knead recipes do produce a very soft dough, but it works a treat and needs very little handling. They sell a UK edition on Amazon that has measurements in weight (metric and imperial) as well as cups.
